Ingredients

2 pounds Salmon fillet

2 tablespoons Vegetable oil

2 tablespoons Soy sauce

1 tablespoon Bourbon (or white wine or whiskey)

2 teaspoons Fresh ginger (grated)

2 tablespoons Brown sugar

1 tablespoon Lemon juice (reserved)

2 pinches Fresh ground pepper

Preparation

Blend ingredients except salmon & lemon juice

Coat salmon in some glaze

Simmer remaining sauce over medium heat until reduced by half

Stir in lemon juice & serve with smoke-cooked fish
