Ingredients

1/4 cup olive oil divided

1/4 cup hummus

2 teaspoons lemon juice

1/8 tablespoons salt

1/8 teaspoon black pepper

1 can chickpeas, drained

2 avacados, chopped

1/2 english cucumber , sliced

8 radishes, sliced

8 ounce riced cauliflower

Preparation

Warm skillet over medium heat with 1 Tsp. of olive oil. Once heated add riced cauliflower.

Cook until soft about 6-8 minutes. Remove from heat.

Whisk together hummus, remaining olive oil, lemon juice, salt and pepper until smooth.

Divide cauliflower among 4 deep bowls. Top with chickpeas, avacado, cucumber and radishes. divide hummus dressing among the bowls.
