You don’t need any special occasion to make these cake batter pancakes. They can be made at any time of the year! Use this batter to make regular size pancakes or pancake cereal! Have you seen all the pancake cereal videos on Tiktok lately? I caved and finally downloaded the app, mostly for the cooking videos. Since pancake cereal is all the rage right now, I thought it would be fun to make this pancake recipe and turn it into cereal. All you do is drop the pancake batter onto a skillet in a teaspoon or tablespoon size pancakes. A squeeze bottle also works really well for making them. Add them to a bowl, and serve it with some maple syrup or the glaze that goes with this batter.
How to Make Cake Batter Pancakes
In a medium mixing bowl, using an electric mixer or stand mixer with a wire whisk attachment, beat egg whites until stiff peaks form. In another medium bowl, sift together flour and cake mix; then add salt, milk, egg, and almond extract Whisk to combine. Gently fold egg whites into batter until combined.Heat a very large nonstick skillet or griddle over medium heat; spray with cooking spray. Make six pancakes at a time by pouring 2 heaping tablespoons of batter into skillet for each pancake (make sure to leave enough space in between each).Cook until bottoms are golden, about 2 minutes; then sprinkle rainbow-colored sprinkles on top. Flip and cook until centers are set, about 2 minutes more.For pancake cereal: Drop teaspoon size pancake bites onto the griddle using a squeeze bottle. For glaze: Mix together powdered sugar, milk, and almond extract together in a bowl until smooth. Makes 12 pancakes. Serving size 1 pancake
