Ingredients
1 piece egg
1/4 cup extra virgin olive oil
2/3 cup milk
1 1/2 cup tapioca flour
1/2 teaspoon salt
3/4 cup grated cheese gruyere, cheddar, parmigiana reggiano
Preparation
oven to 400, grease muffin tin w/spray or whatever
combine all ingredients and beat with immersion blender until frothy
Fill tins to halfway, and bake for 20 minutes until the tops are lightly browned
cool 2 minutes and pop out - serve warm and can reheat in Mwave for 15 seconds to rewarm
