Ingredients
1/2 cup Olive Oil
1/4 cup Blue Cheese, crumbled
1/4 cup Lemon Juice
1 egg
4 Anchovy Fillets, drained, rinsed and chopped
1 Garlic, minced
3/4 teaspoon Salt
1/2 teaspoon Dry Mustard
1/4 teaspoon Tabasco
2 heads Romaine, torn in pieces
3/4 cup Croutons
1/2 cup Parmesan, freshly grated
Preparation
Dressing: Place the first 9 ingredients in a blender and mix until smooth.
Place romaine in a large wooden salad bowl, add croutons and parmesan - add dressing a little at a time and toss.
