Ingredients
3/4 cups Dried black beans
1 1/2 tablespoons Lemon juice
6 tablespoons Cooking liquid
2 tablespoons Tahini
1 clove Garlic
3 tablespoons Lemon juice
5 tablespoons Extra virgin olive oil
1 teaspoon Cumin
3/4 teaspoons Smoke paprika
Preparation
Soak black beans in water and 1 1/2 tbsp of lemon juice over night. Rinse and add to sauce pan. Add enough salted water to cover by 1 inch, bring to a boil then simmer for 45 - 60 minutes, until bean is tender.
Place cooked black beans with reminding ingredients in food processor and process until desired texture. Adjust liquid, lemon juice and salt.
