Biscoff is a cookie butter spread made by Lotus so if you can’t make it to a Trader Joe’s check out Target or your local grocery store. It should be located by the peanut butter and Nutella. It’s so delicious, I can just eat it with a spoon. Instead of peanut butter which is typically found in scotcheroos try adding cookie butter instead! It’s even better. Do you ever play that game where you combine words to make a new word? That is what I did this recipe and why I called them Biscoferoos instead of Cookie Butter Scotcheroos. Pretty clever huh? 😉 J/K

Check out this section here. white sugar & light corn syrup - these two ingredients get simmered together until the sugar has dissolved. Do not over boil these two ingredients or else your bars will end up being hard as a rock! Biscoff spread - any type of nut butter will work with this recipe Rice Krispie cereal - Cheerios can work if you don’t like to use rice cereal semisweet chocolate chips and butterscotch chips - To make a smooth chocolate coating for bars, add in a little vegetable oil or coconut oil to the chocolate chips as you are melting them in the microwave. This will give the bars a nice shiny coating.
How to Make Cookie Butter Scotcheroos
Butter a 9x13 inch baking pan. In a saucepan over medium heat, combine the sugar and corn syrup, and bring to a simmer. Remove from heat, and stir in Biscoff spread. Mix in the rice cereal until evenly coated. Press the mixture into the prepared pan. In a glass bowl in the microwave, melt the chocolate and butterscotch chips, stirring occasionally until smooth and well blended. Spread over the top of the bars. Chill until set, then cut into bars.
