Ingredients

1 Beef, Rub, Mustard, BBQ sauce

Preparation

Dry the brisket

Rub very lightly with mustard. Just enough so rub can stick

Put rub all over brisket. Let sit for 1-3 hours

Get BGE to 250 degrees and put brisket on fat side up

Let cook until internal temp gets to 165-170 degrees

(TX Crutch) Take off of BGE, add a light basting of BBQ sauce and wrap in foil or butcher paper and then place back on BGE.

Let cook until internal temp of brisket reaches 203

Take off of grill and place in a cooler still wrapped for 1-3 hours and then serve.

If want before letting rest you can blast the egg to char the brisket and then pull off to rest in the cooler. This can help create a good crust if hasn’t already happened.

Brisket should cook take 1:15 per pound to get to 203. It should take a couple 2-3 hours to get from 165-203 with the TX crutch wrap
