Ingredients

3 Egg Whites

3/4 cup Powdered Sugar

1 teaspoon Vanilla

1/2 teaspoon Salt

2 1/2 cups Unsweetened Coconut

Preparation

Preheat oven to 325 degrees (160c)

Line baking sheet with parchment

Whisk egg whites and powdered sugar until foamy

Add vanilla and salt

Stir in unsweetened coconut

Using a scoop or shaping in your hands, form into balls. Place on parchment-lined cookie sheet

Bake for 20 minutes or until top begins to brown

Let cool…optional, once cooled, dip bottoms in melted chocolate (microwave method easiest)
