But for my homemade version, I either boil or bake the chicken breasts with salt and pepper. Once it cools, I shred the chicken instead of chopping it into cubes. By using this cooking method, it provides moist and flavorful chicken that coats perfectly with the other ingredients. For the rest of the chicken salad ingredients, I use ⅓ cup of mayonnaise which lightly coats the shredded meat. I then add finely chopped celery, onion, pecans. Since my recipe calls for mayonnaise, I don’t recommend freezing it. When it thaws the consistency will be off and the flavor is no longer fresh. I typically boil the chicken breasts for this recipe. I don’t recommend using rotisserie or canned chicken because the texture will be completely different.Use chicken breasts for this recipe, not thighs. White meat tastes the best. If you want to add more mayonnaise, use ½ cup.Use light mayonnaise to reduce the amount of calories and fat. I tried substituting chopped walnuts for the pecans and it was awful.
