Ingredients
4 pounds Beef Tenderloin
4 teaspoons KOSHER salt ( 1 tsp per pound)
Preparation
Season meat with salt and preferably, let sit over night or for several hours.
Preheat oven to 475 degrees
Place meat on roasting rack and cook at the high temperature for 15 min.
Reduce heat to 350 degrees and continue cooking for another 40 min
Remove meat from oven and wrap tightly, like a log, with HEAVY DUTY aluminum foil.
Let rest on carving platter for 1 hour.
Carve in thick slices and serve with bearnaise sauce.
