Ever have any macaroni and cheese leftover and don’t know what to do with it? Spread the leftovers on top of some pizza dough and bake it in the oven. Boom! Mac and cheese pizza. The mac and cheese recipe is from one of my older posts.   Macaroni and cheese is delicious on top of a pizza and if you’ve never had it before now is the time! You can try mac and cheese pizza at places like Cici’s or Papa John’s.

Recipe Tips and Tricks 

Sometimes I’m a lazy cook and don’t want to make my own pizza dough. The 2 Ingredient Dough recipe which is just equal parts Greek Yogurt and self-rising will work wonderfully for this pizza recipe if you are trying to lower the points more.  Check out the recipe here: 2 Ingredient Dough.  Bacon: I like to keep a bag of Hormel Black Label bacon in my fridge which you can purchase at Sam’s Club or any grocery store. Just pop it in the microwave for under a minute and there you have a quick bacon topping.  WW: For a WW friendly pizza find one of those individual serving size pizza crusts that are only 4 to 6 points instead of making a whole pizza.

How to make  Mac and Cheese Pizza 

For Mac and Cheese:  In a medium sauce pan, boil the medium shells for 8-10 minutes until al dente. While the noodles are cooking let the 2 cups of milk come to a simmer in a medium saucepan. Whisk the remaining ½ cup of milk and ¼ cup of flour together in a bowl until the flour is combined. Add to the cups of milk that is simmering on the stovetop. Let the milk and flour thicken for another 5 minutes. Add in salt and pepper for seasoning. Stir in the cheese until melted and combine the cheese with the noodles. Put the broiler on high and add noodles to some oven proof bowls such as ramekins. Sprinkle some panko over the top and let the panko brown in the oven. For Pizza:  Preheat oven to 400 degrees.  Spread 1 to 2 cups of prepared Mac and cheese on top of pizza crust. Then sprinkle the cheese over the top. Bake in an oven for 10 to 15 minutes.  Take the pizza out and garnish the pizza with diced bacon.
