Enjoy the taste of Breakfast with these bacon and egg cups baked right in the oven. You can always add some cooked vegetables to the bottom of the cup before adding the egg on top. Saute some zucchini, mushrooms, or onions in a skillet with some butter first before cooking the eggs in the oven.
Air Fryer Instructions
If you wish to cook these in an air fryer, find silicon molds that will fit the bottom of your air fryer. They come in single molds or in molds of 4. Place all the bacon and eggs in a mold then gently lift them into the air fryer basket. Air fry for 330 for 10 minutes. You don’t want the temperature too high or else the eggs will burn on top. Eggs - I used large eggs Bacon - Depending on how thick your bacon is the time it takes to cook the breakfast cups might vary. Cheese - Use any type of cheese you like. Cheddar, Colby Jack, or Pepper jack would be good Salt and Pepper - to taste Garnish the eggs with fresh herbs like chopped parsley or chives
How to make Bacon and Egg Cups
See and print the full recipe below. Preheat oven to 400 degrees F (200 degrees C). Lightly coat a muffin tin with oil. Line 8 muffin cups with 1 slice of bacon each. Crack an egg into each mold, season with salt and pepper and give each cup a sprinkle of cheese (you can also add the beneath the egg). Bake in the preheated oven until egg whites are completely set, about 15 minutes. Top with black pepper.
