Ingredients
1 cup Quick Oats Oatmel
1 cup Wheat Bran
2 tablespoons Olivio light spread (or similar reduced calorie butter alternative)
4 tablespoons Light or Non-Fat vanilla yogurt
2 tablespoons Splenda brown sugar blend (or similar alternative, e.g., truvia)
1/2 teaspoon “light” salt (has half the sodium content)
1/2 teaspoon baking powder
1 can No Sugar Added pie filler
Preparation
Preheat oven to 350 degrees fahrenheit
Add oats, wheat bran, salt and baking powder and thoroughly mix
Add Splenda blend and mix again
If your butter substitute spread is too firm, allow it to soften.
Add butter substitute and yogurt to the oat/bran mixture, mix thoroughly for about 2 minutes with a fork. Mix should be crumbly, but stick together when pressed
Use two-thirds of the mixture and press evenly and firmly into a 9-inch pie pan to form the crust
Bake crust for 5 minutes
Remove crust from oven and add the pie filling to make a single smooth layer
Evenly sprinkle the remaining crust mixture over the surface of the filling
Bake for another 20 minutes
