Ingredients
2 cups Orange or Grapefruit Peel, sliced thinly
1/2 cup Water
1 cup Granulated sugar
Preparation
Place peel in pot; cover with several cups water and bring to boil. Drain well. Repeat until peel is no longer bitter, 2-6 times.
Make syrup: combine sugar and water in pot, bring to a boil and simmer until sugar is dissolved.
Add peel. Bring to boil and cook, stirring, until all syrup is absorbed and peel is transparent. Watch carefully so it doesn’t burn.
Turn peel into a large bowl. Cover with more granulated sugar and toss until all sides of peels are coated.
Spread out on one layer on racks to dry, making sure air can circulate around each piece. This can take a few hours, or can be left overnight.
Store between layers of parchment in airtight containers.
