Ingredients

1 pound Fresh Asparagus, cut in 1/2 inches pieces

1/2 cup Orange Juice

1 tablespoon Lime juice

2 tablespoons Orange Marmalade

1/2 teaspoon Grated Ginger

2 tablespoons Virgin Olive Oil

3 tablespoons Pine Nuts

8 cups Romaine Lettuce, torn in bite size pieces

Preparation

Steam asparagus until crunchy, about 2 minutes. Drain and plunge in ice water. For dressing combine orange juice, lime juice, marmalade, ginger and olive oil. When ready to serve place romaine in a chilled bowl, place drained asparagus on top. Drizzle dressing over all with the pine nuts and toss. Serves 4-6
