Ingredients

1/4 cup Cilantro (tightly packed)

1/2 cup Spinach (tightly packed)

3/4 cup Chicken broth

3/4 cup Milk

3/4 teaspoon Salt

1/2 tablespoon Olive Oil

1/2 tablespoon Butter

3/4 cup White rice

1/4 cup Onion (finely chopped)

1 clove Garlic (smashed)

Preparation

Blend cilantro, spinach and broth in blender.

Add milk and salt, blend

Heat olive oil and butter

Add rice and sauté stirring every 30 seconds until rice begins to brown, 3 - 4 minutes

Add onion and garlic and cook 1 minute, stirring constantly

Add blender contents stir and bring to boil

Cover pot, turn heat to low and cook for 20 minutes
