Ingredients

4 tablespoon Earth Balance or olive oil

2 onion, large thinly sliced

3 Golden delicious or granny smith apples, peeled, cored and chopped

2 1/2 pounds brocolli, cut into florettes and 2" pieces

6 cups chicken or vegetable stock

1 pinch white pepper, to taste

Preparation

Melt vegetable spread or olive oil in largge soup pot.

Add onions and apples Cover and cook until soft about 5-7 minutes.

Add brocolli and stock to pot and bring to boil.

Reduce heat and simmer, uncovered until brocolli is tender.

Cool slightly.

Puree in blender until smooth. ***Caution- only fill blender about 3/4 full to let steam escape while blending.

Serve with dollop of plain yogert on top as garnish.
