Ingredients
1 cup cake flour ( +2 TBS)
1 1/2 cups siften sugar
1 1/4 cups room temperature egg whites (10-12)
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 teaspoon vanilla
1/4 teaspoon almond extract
Preparation
sift 1/2 cup sugar + flour 4 times
beat egg whites until soft peaks with salt, cream of tartar and flavoring. blend on high speed till soft peaks form
add remaining sugar 4 TBS at a time and continue beating ..
sift flour over whites and fold
bake in angel food pan at 375 for 30-35 minutes
