My brother introduced me to this Mango Tofu bowl recipe. The original recipe is from Cookie and Kate’s Blog. I just figured out a simple and easy way to make it during the workweek with the following changes. I used the air fryer to cook the tofu and a packet of 90-second microwave-ready Jasmine rice from Target. The air fryer gets the tofu extra crispy and crunchy instead of baking it in the oven.  You can make the salsa and peanut sauce while the tofu is cooking or even use store-bought peanut dressing. This whole vegetarian-friendly meal or meatless Monday meal can be ready in under 20 minutes. I’ve been trying to lower my cholesterol levels lately by eating more vegetarian meals and fiber. Some black beans and avocado would be a great addition to the meal.
