Time for a big fat shrimp confession for you all!!! I live in Portugal and living on the Mediterranean means that we don’t have a big following of American food traditions. Instead we have the Mediterranean diet and some trends just pass us by. It wasn’t until a couple of weeks ago when one of my readers asked me to do her a recipe for air fryer shrimp scampi that I investigated it and found out what it was. What I learnt is that it was very similar to what us Europeans would call garlic butter shrimp, or garlic butter prawns if you live in the UK. Straight away I was thinking about the similarities of garlic butter shrimp and how similar scampi shrimp is to it and how perfect it would be for my pizza pan cooked in the air fryer. If you head to any beach resort in Spain and Portugal and you will be presented with more places than you can possibly visit that serve garlic shrimp. Many of which we have eaten out at personally over the years. Quite often it will be served in a tapas dish like this: Or served on skewers and it will hang down and you will grab a shrimp at a time. When you get shrimp skewers it will always be served with plenty of delicious potatoes too, like these garlic and bacon air fryer ones. Though my favourite is the tapas option like I am showing you today, where the garlic and butter is loaded with white wine and it is a similar flavour to French garlic mussels. Whatever you call it, this air fryer shrimp scampi is so fast to prep and OMG you will want to eat it all the time!

Absolutely! Shrimp is delicious when cooked in an air fryer and there is so many ways that you can cook air fryer shrimp. Think of it like the movie Forrest Gump. When Bubba is explaining to Forrest all these wonderful ways that you can cook shrimp, well the same rule applies to air fryer shrimp. Just think an air fryer can grill, stir fry, deep fry, microwave and bake your food, so think of how many times that would apply to how you like your shrimp.

Yes you can. What I do is buy a big bag of frozen cooked shrimp and keep it in the chest freezer. Then whenever I want to eat shrimp I can get a handful of shrimp out and cook it from frozen in the air fryer. Frozen shrimp cooks fast in the air fryer too, so no need to thaw your shrimp before air frying.
