Ingredients

2 pounds Ripe tomatos

1 cubanelle or anaheim pepper

1 peeled cucumber

1 mild or sweet onion, small

1 clove garlic

3 teaspoons sherry vinegar

1 teaspoon salt

1/2 cup olive oil

Preparation

blend tomatoes, pepper, cucumber, onion and garlic in a blender at least 2 minutes

Add vinegar and 2 t salt, drizzle in olive oil

strain , pushing all liquid through, discard solids, transfer to pitcher and chill

Adjust seasonings, and serve with cilantro or basil on top
